A little about LAGERS…
Lagers are surely the most familiar and popular beer on the planet. Many of us likely started out drinking lighter beers – known as macro lagers – from international mega brands. We’re talking about corporations that sell enough of this stuff to run Super Bowl ads. That means they need their beer to taste the same whether it’s brewed in St. Louis – or Shanghai. While we appreciate these beers, there is so much more to the world of lagers than that. Lagers can be dark or light, sessionable or strong, malty or hoppy, simple or complex. As we are afforded new space with our brewhouse expansion, we are excited to share our love of lagers with you – and we have several new ones on the way. All of them will employ the German technique of ßpunding, which is essentially fermenting the beer under pressure. This process suppresses the formation of flavors that we normally have to eliminate by using time and temperature, and instead creates that super clean finish that all lagers have in common. It also naturally carbonates the beer, ensuring that all the aromas and complexity we form during production stay IN the beer – and don’t get blown out during the infusion of carbon dioxide. In our new brewing space, we have added a few horizontal tanks instead of our typical conical tanks. This style of tank increases surface area and decreases the depth, helping to create that brilliant clarity everyone expects from such a clean beer style.
